I don’t think I’ve ever met anyone who doesn’t like hummus. It’s a crowd pleaser and one of the first dips to run out at a party. We have a party to go to this weekend and I can’t decide between bringing hummus or the mini frittatas. Maybe I’ll bring both!
Even if you are cooking for one, I highly recommend making a double batch as it keeps well in the fridge or freezer. Trust me, you’ll make quick work of this and wish you had made more.
I start with a basic batch of hummus and then divide it into 3 portions. I add sun-dried tomatoes to one part, parsley to the next, and extra garlic to the last. If I had to pick a favorite, I think it would be the parsley because it somehow makes the hummus really “pop”, if that makes any sense. My husband says it makes the hummus “come alive.” Try all three to see which one you like best!
If making all 3 types of hummus, I recommend that you make the garlic first, followed by the sun-dried tomato, followed by the parsley. That order seems to keep the flavors separated the best – unless you plan to thoroughly wash the food processor between each preparation. I’m NOT that disciplined!
Basic Hummus Ingredients
1 can garbanzo beans (drained and rinsed)
½ cup tahini
3-4 tablespoons fresh lemon juice
2 – 4 tbsp. water
¼ sweet onion
2-3 garlic cloves
½ tbsp. paprika
½ tbsp. cumin
sea salt to taste
Extras
1-2 garlic cloves
¼ cup parsley
2 – 3 tbsp. sun-dried tomatoes (packed either in water or olive oil)
Directions
- Place all of the Basic Hummus ingredients, except the water and salt, in a food processor and mix well.
- If hummus is too thick for your liking, thin it out one tablespoon of water at a time until desired consistency is reached.
- Salt to taste.
- Remove from food processor and separate into 3 even portions.
- For garlic hummus, place one portion of hummus back into food processor. Add 1 extra garlic clove at a time and blend until desired taste is achieved. Remove from food processor, cleaning as much out as possible with a spatula.
- For sun-dried tomato hummus, add a portion of the basic hummus into the food processor. Add 1 tablespoon of sun-dried tomatoes at a time a blend. Keep adding tomatoes until desired taste is achieved. Remove from food processor and clean out as much as possible with spatula.
- For parsley hummus, add last portion of the basic hummus into the food processor. Add parsley and blend until parsley is finely chopped.
Serve with veggies, crackers and/or bread of choice.
