Here is another Dr. Fuhrman Eat to Live plan friendly dish. I must confess that this dish was made by my husband. Tasty lentils are his specialty. He grew up on lentils, but I didn’t have lentils until he made them for me years ago. Or maybe I had some made by his mom first. Either way, they both have a special flair for making lentil dishes and I’ve been hooked on them ever since.
Dr. Fuhrman advocates eating unlimited amounts of salads and soups loaded with high nutrient content ingredients and this soup is full of them – lentils are loaded with protein, tomatoes have more than 10,000 different cancer-fighting phytochemicals, spinach is loaded with vitamins, minerals and fiber. Delicious and nutritious. What’s not to like about that!
Ingredients (serves 8 – 10)
2 cups dry lentils
1 package/bag baby spinach – roughly chopped
1 large white or yellow onion – diced
3-4 medium carrots – ¼ inch slices
1 pint cherry/grape tomatoes – cut in half
3 garlic cloves – sliced
1 carton vegetable broth
1 cup chopped parsley
1 tbsp. paprika
2 tbsp. tomato paste
1 tsp. fresh ground pepper
salt to taste
Directions
1. Soak lentils in 6 cups of water for 6 hours or overnight. They will double or triple in size.
2. In a large pot, steam fry carrots, garlic and onions in just enough vegetable broth to prevent burning. Cook for 7 – 10 minutes until they begin to soften.
3. Add in paprika, ground pepper and parsley. Cook for 1-2 minutes.
4. Drain soaking water from lentils. Add lentils, tomatoes, tomato paste and vegetable broth to pot. Bring to a boil, then cover and reduce to simmer. Simmer for 25 – 35 minutes until lentils are cooked.
5. Stir in spinach, making sure it’s completely covered with liquid, and cook for another 5 minutes until spinach is cooked and bright green.
6. Salt to taste if desired.
7. Serve hot or cold.

Once again spectacular photos! I like how you have large chunks of carrots in the recipe as opposed to small diced. Makes it seem heartier and more filling. Yum. Going to try this one.

Hi Cheri. Yes, it’s great to have a husband who cooks. He actually used to do all of the cooking until I went on a macrobiotic diet about 17 years ago. Now we share cooking duties. It’s so much more fun to cook together.
