All of my recipe posts in May were Dr. Fuhrman Eat To Live plan friendly. Although I don’t intend to do the same for June, this recipe just happens to meet the requirements of his weight loss and life plans. I wanted to stay away from heavy dairy cream. I’ve made this before with coconut milk, which works quite nicely, but wanted to see if I could find another substitute for the cream. And I came up with avocado! They are creamy and buttery, as well as bright green like the asparagus.
I had no idea whether this would work, but I threw it together and served it to my husband without telling him the secret ingredient. I studied his face carefully as he slurped it down, looking for the slightest scowl that would be his way of saying “what’s wrong with this or what’s missing?” To my surprise, he ate the whole bowl before saying “that was great!” Then I told him about the avocado. He said he never would have guessed that – it just tasted like good ol’ cream of asparagus soup.
This is very simple to put together – only a few ingredients that take about 20 minutes to make from start to finish. This can be served either hot or cold, and given our continued weather shifts where the temperature swings between 50 and 90 in less than a day, it’s nice to have something so versatile.
Ingredients (serves 4 – 6)
1 bunch of asparagus (about 3 cups chopped)
1 cup chopped shallots or sweet onion
2 Hass avocados (diced)
1 quart vegetable broth
1 tbsp. herb de provence
1 tsp. sea salt
freshly ground black pepper
Directions
- Place asparagus, shallots/onions and herb de provence in a soup pot with about ½ inch of vegetable broth. “Steam fry” the vegetables until they start to soften (about 5 minutes).
- Add remaining broth and bring to a boil. Reduce heat to simmer, cover, and cook for 10 minutes.
- Remove pot from stove. Add avocado. Using either an immersion blender or food processor, blend until pureed and smooth.
- Add salt and pepper to taste.
- Serve hot or cold.

YUM!!! When I saw this recipe I had no idea it would have avocado in it. What an excellent idea. I am going to try this, it looks so easy and so delicious. I love the green color and the choice of two different bowls ( square and round). Well done.
