Q: What’s black and white and red all over?
A: This smoothie! And a zebra with a diaper rash.
My niece and nephew are coming home from school with a lot of jokes lately. They cracked this one open over the weekend:
Q: What do a bad joke and a dull pencil have in common?
A: Neither of them have a point.
I think that’s pretty darn good for a 6 and 8 year old!
So back to the smoothie. The black is chia seeds, the white is banana and soy milk, and the red is raspberries and strawberries. As promised here, every recipe I post in May will be compliant with the plan in Dr. Joel Fuhrman’s Eat To Live book. This lives up to his standards in a delicious way.
The chia seeds are a good source of calcium, fiber, phosphorus and omega-3s. The berries provide disease-fighting anti-oxidants. The banana is a good source of fiber, potassium and B6, while the soy milk provides protein as well as calcium. But you could serve this to anyone and they wouldn’t think it’s a healthy drink – they’d just say “more please!”
If you want to drink this as a smoothie, use fresh (or thawed) fruit and add only 1 tablespoon of chia seeds, as they will thicken the drink. If you want it to be more like pudding to eat with a spoon, use frozen fruit and add 3 tablespoons of chia seeds. I personally like mine thick so it’s more like dessert!
Ingredients (serves 1)
1 banana
½ cup fresh or frozen raspberries
½ cup fresh or frozen strawberries
1 – 3 tablespoons chia seeds
1 cup soymilk (or almond or coconut)
Directions
1. Decide whether you want to use fresh or frozen fruit for the reasons discussed above. Also decide how much chia seed you want to use. I recommend 1 tablespoon for a thinner smoothie and 3 tablespoons for a very thick, pudding-like, eat-it-with-a-spoon consistency. Also, for a thinner smoothie, I suggest grinding the chia seeds in a spice or coffee grinder first.
2. Chop all fruit into similar size pieces. This helps the blending process.
3. Place all ingredients in a blender and blend until completely smooth and evenly mixed.
4. Serve chilled.
