I don’t have any plans to go out on St. Patrick’s Day. Then again, since it falls on Monday this year, is anybody really going to wait until then?
I live in Chicago. Besides Ireland itself, I think you’d be hard-pressed to find any place that can get its Green on better than Chicago. We even dye our river green for the occasion – although we can’t do it this year because it’s frozen over. It’s the first time that’s happened since………ever! (Update: The ice on the river and lake cleared out and they dyed the river the green. The mayor of Cork County Ireland was on hand for the weekend festivities. He said they do not dye their rivers green. And they don’t wear green to the extent Chicago does. So it looks like we do get our Green on more than Ireland – literally!)
So go ahead. Get caught up in the revelry. See the world through green-colored glasses. Kiss a leprechaun.
Just do yourself a favor and have these ingredients on hand to throw in the blender the next morning. Trust me, it helps.
Ingredients
½ avocado
1 banana – sliced into chunks
1 handful chopped kale (about 1 cup loosely packed)
1 handful baby spinach leaves (about 1 cup loosely packed)
½ medium cucumber – roughly chopped
1 medium stalk celery chopped – use only the very tender celery heart
juice of 1-2 small limes (use as much/little as you like, to taste)
3 tbsp. hemp seed
1 ½ c. coconut water
agave nectar or sweetener of choice (if desired)
Directions
- Throw everything into a blender or food processor and blend until completely smooth.
- Drink immediately.
