After the mess in our house (see this post) was finally was under control, I decided to keep going and do some spring cleaning and painting projects that have been on the back burner since……forever. Those projects are never as easy as you think, so the blog took a back seat last week. I know how hard it can be to eat properly when you are super busy, and how easy it can be to let bad eating habits creep up on you. Yes, I did eat out a bit, but I tried to balance that with home cooking. So I thought I’d share a couple of the quick meals I threw together on the fly – ready in less than 10 minutes!
Ingredients (serves one)
2 eggs
1 handful baby spinach leaves
½ ounce grated parmesan
salt & pepper to taste
Directions
1. Mix eggs with salt and pepper in a bowl.
2. Grate cheese and set aside.
3. Spray non-stick pan with thick coat of cooking spray (I used coconut oil), and sauté spinach until cooked (about 2 – 3 minute) over medium heat.
4. Pour eggs over cooked spinach. Reduce heat to low, cover, and let cook for about 3 minutes until eggs are almost completely cooked. Then flip and let cook another 30 – 60 seconds.
5. Transfer to serving dish. Garnish with parmesan. Serve hot immediately.
