First, I want to thank everyone for the email well wishes regarding yesterday’s post. I’m very touched!
In prepping for today’s recap, I realize that I made the very mistake I warned about in yesterday’s post regarding carb intake. I double dosed again — at breakfast and lunch. I originally planned on a smoothie for breakfast, but at the last minute opted for oatmeal because it was really chilly outside and I wanted something warm. For lunch I planned on a remake of yesterday’s wrap, but forgot about already having the carbs at breakfast. It’s surprising to see how sensitive I am to carbs when it comes to losing weight. I hope I don’t have this much difficulty when I get to the maintenance phase!
Exercise: I worked in 30 minutes this morning! Yea!
Today’s Recipes
Breakfast: Quinoa Banana & Raspberry Breakfast Bowl with Pistachios & Black Currants
My husband made up some quinoa to have on hand and I couldn’t resist this morning. I added in 1 banana, 1 cup raspberries, 1 tablespoon pistachios and 2 tablespoons of black currants. Then I topped it with 1/2 cup of soy milk and nuked it until it was nice and toasty warm!
Lunch: Pita Bowl with Middle Eastern Salad Arugula & Tahini Dressing
Instead of a wrap like yesterday, I intended this to be a pita sandwich. But I stuffed so much salad into the pita that the bottom started ripping, so just like a taco salad, I turned the pita into a bowl. I used about 1 1/2 cups of the Middle Eastern Salad, a bunch of arugula, and tahini dressing. I left out the hummus today because I’m kind of chickpea-d out. A little goes a long way!
Dinner: Basic Salad with Guacamole, Black Beans & Pepitas; Melon
I didn’t get to snap of photo of dinner because the sun had gone down (this Daylight Savings Time is problematic for photo shoots). I had about 3 cups of the Basic Salad, 1 cup of black beans, 1/2 cup of guacamole (1/2 avocado, lime juice, cilantro, sliced green onions, garlic powder) and 1 tablespoon of pepitas (pumpkin seeds). I also had about 1/4 of a very large honey dew melon.
