Yesterday, I was concerned whether using miso paste in the soup I made would cause problems due to the sodium content. So far, it doesn’t seem to be. I wasn’t swollen up this morning and I didn’t gain any water weight. However, I had more of the soup today and there could be a compounding effect, so I’ll just have to wait a few days to see what happens.

Breakfast: Mushroom Onion & Tofu Miso Soup with Carrots & Spinach
Yes, I had this for breakfast. I often eat salad or other lunch/dinner type foods for breakfast. Who hasn’t eaten cold pizza for breakfast? Just because it’s early doesn’t mean you need to stick with oatmeal or a fruit smoothie. Mix it up on occasion! You can find this recipe in this post.
Lunch: Basic Salad with Black Beans, Pumpkin Seeds & Avocado; Honeydew Melon

I can’t even begin to tell you how delicious this is. I wanted to start coming up with some dishes to bring for Thanksgiving, and this looks and tastes about as Thanksgiving-y as it gets! You can get the recipe in this post.
