My internet connection was down for most of the day Friday, so I’m posting this a bit late! I’ll keep this one short and to the point.
Friday’s Recipes
Breakfast: Banana Melon & Raspberry Smoothie
We bought a huge and very sweet honeydew melon at the market that I’ve been snacking on all week. I used 1 cup of melon, 1 banana, 1 cup of raspberries, 1/2 cup almond milk, 1/2 cup water, 1/4 cup lemon juice and a tablespoon of hemp seeds.
Lunch: Basic Salad with Black Beans Avocado & Pepitas
I had a large salad along with more melon!
Dinner: Stuffed Acorn Squash
This was even better the next day as the flavors had time to meld. You can get the recipe in this post.
