It seems like every other day there’s another article or study praising the health benefits of the Mediterranean diet, like how it can lower the risk of heart disease, stroke, and memory loss. If you’re looking to jump on the band wagon but don’t know where to start, try this beautiful and delicious salad made with your favorite rustic bread.
Ingredients
6 ounces baby arugula
4 ounces feta cheese — crumbled
½ cup mixed kalamata and green olives
½ cup thinly sliced red onion
½ cup thinly sliced radish
1 medium seedless cucumber – thinly sliced
1 pint cherry tomatoes – cut in half
1 14 ounce can artichoke hearts – packed in water – cut into quarters
4 slices bread
1 large garlic clove
extra virgin olive oil cooking spray
Dressing Ingredients
1/3 cup red wine vinegar
2 tablespoons extra virgin olive oil
1 small garlic clove – minced
½ teaspoon dried oregano
¼ teaspoon black pepper
Directions
- Place all dressing ingredients in a small jar, shake well and refrigerate until ready for use.
- Spray both sides of bread slices with a light dusting of cooking oil spray.
- Cut the bottom third off a large garlic clove and rub the flat side of the garlic over both sides of the bread.
