Today was one of the few times I felt hungry between meals. I had breakfast early (7:30 instead of 9:30) which left me hungry by 10:30. By 11, I couldn’t hold off any more, so I had a can of white beans with balsamic vinegar. I know that sounds strange, but I often make a snack out of a can of beans. Before starting this challenge, I would top the beans with oil, vinegar, salt and pepper. Now it’s just vinegar. That held me over until lunch, which was amazing!
Today’s Helpful Hint
I probably should have put this in yesterday’s recap since it involves the avocado I used for a breakfast smoothie. I only used half of the avocado and wanted to keep the rest of it from turning black. I find that what works best is to leave the pit in the unused portion of the avocado. Then coat the exposed flesh with lemon or lime juice. Then wrap the avocado in plastic wrap, pushing it again the exposed flesh. Then refrigerate. If you don’t have plastic wrap handy, just put the avocado in a container with a tight-fitting lid that is just big enough to accommodate the avocado, along with the lemon/lime juice on the flesh. Then the next day when you want to use the avocado, cut off a thin layer of the exposed flesh (if it’s turned color) and use the remainder.

Because I liked it so much yesterday, I made the same smoothie for breakfast today. And I used up the second half of yesterday’s avocado. I know that the Eat To Live program only allows 1/4 of an avocado per day, but I splurged – again. You can find the recipe on this post.
Lunch: Roasted & Curried Delicata Squash-Carrot Puree with Zucchini & Yellow Squash Noodles

Dinner: Basic Salad and more curried squash noodles!
I used up the rest of the artichoke hearts with the Basic Salad, as well as plenty of grape tomatoes and red wine vinegar for dressing. I also had a small bowl of the curried squash noodles!
