Winter is making itself known today, so I felt the need for hot foods today. Salad just wasn’t going to cut it. And turning on the oven to roast veggies made the kitchen a nice, toasty warm place to hang out. Breakfast and lunch were so good that I decided to make separate posts for the recipes (see links below). My goal this week is to drop 2 pounds to help make up for last week’s 1/2 pound gain. So far, I think I’ll make that happen so long as I don’t do anything out of line over the weekend!

Breakfast: Chocolate-Banana Quinoa Breakfast Bowl with Raspberry Sauce
This breakfast was a bit nostalgic for me. Count Chocula was one of my favorite breakfast cereals growing up. But this version is very healthy, so you can eat it guilt-free. You can find the recipe in this post.
Lunch: Roasted Vegetable and Mushroom Fajitas
These are so delicious and loaded with flavor that you’ll feel like your cheating eating them. Roasting vegetables is a great way to prepare delicious meals while on a weight-loss program because the flavors are intensified and sweetened, making them satisfying and filling. Dinner: Curried Butternut Squash with Tofu & Sweet Peas
I actually had 2 large bowls of this for dinner because I wanted to finish up everything that was left over. This is a great dish to have when it’s cold outside and the snow started just in time! You can find the recipe in this post.
