There are three things about this recipe that your guests don’t need to know. First, that it’s loaded with protein and other good-for-you ingredients. Second, that it’s super simple to make. And three, that it’s loaded with garlic. Well, they’ll eventually figure that one out, but you know what they say – if everyone’s eating it….. With a party dip as healthy and clean as this one, wear your garlic breath with pride!
Ingredients
2 cups fava beans (fresh or frozen)
1 14-ounce can low-sodium cannellini beans (rinsed and drained)
½ cup sweet peas (fresh or frozen)
½ cup chopped sweet onion
¼ cup chopped cilantro
1/3 cup fresh lemon juice
1 – 2 tablespoons chopped garlic
2 tablespoons extra-virgin olive oil
1 teaspoon salt
½ teaspoon freshly ground black pepper
Directions
- If using fresh fava beans and green peas, steam the favas for 7 – 10 minutes and add the peas in 2 – 3 minutes before the favas are done. Run under cold water to stop cooking.
- Place the favas, peas and all other ingredients (except garlic) into a food processor and blend until smooth. Add the garlic in small amounts, blend thoroughly and taste test until desired result is achieved.
- Chill before serving. Serve with veggie sticks or chips.
