This is one of the “go to” salads we always have on hand. Not only is it incredibly delicious, the colors make it very visually appealing (at least according to my father in law, and I whole-heartedly agree). I eat with my eyes first, so I immediately start salivating when I pull this out of the fridge. And it never disappoints. Bring this to picnics and potlucks and I can guarantee you’ll see the bottom of the bowl in no time!
Ingredients:
1 15 oz. can black beans (drained and rinsed)
1 large red pepper – diced
3 green onions – thinly sliced
½ cup fresh or frozen corn (I like Trader Joe’s brand of roasted corn used here, but any sweet white or yellow corn works)
½ cup chopped cilantro
¼ cup lime juice (or as much as you like)
sea salt to taste
Directions:
- Mix all ingredients well in a large bowl and salt to taste.
- It’s not necessary to thaw the frozen corn. It thaws on its own fairly quickly and has a better texture than if you boil it or nuke it in the microwave.
