I ended up having 2 breakfasts today and lots of fruit was involved. I don’t know what triggered it, but for lunch I just had to have oatmeal. So I did! We’re finishing up the Mexican fare that dominated the first half of the week, so tomorrow it’s off to the grocery store to pick up a few more things and cook for the rest of the week. I haven’t decided if I’ll continue with the Mexican theme — I’ll have to see what catches my eye at the market.
Today’s Recipes
Breakfast: Banana Melon Mango & Hemp Seed Smoothie
I made this one extra large. Our old Nutribullet died, so we replaced it. It came with a larger-capacity smoothie cup, so I took full advantage. I made this with 1 banana, 1 cup honeydew melon, 1 cup mango, 1 tablespoon hemp seed, 1/2 cup soy milk and 1/2 cup of water.
Lunch: 5-Minute Oatmeal & Fruit Bowl
Like I said, for some reason I just had to have oatmeal for lunch. I actually made this for my blog in January 2014 when I was on the ETL program for the first time. Click on this link to get the recipe. It’s my take on one of Dr. Fuhrman’s breakfast recipes.
Dinner: Tex-Mex Tempeh Tacos, Black Bean & Chickpea Salad, Basic Salad
We finished up the Tex-Mex Tempeh Tacos and have made a serious dent in the rather large Black Bean & Chickpea Salad prepared on Sunday. You can find the black bean salad recipe in this post. A Basic Salad finished off the meal.
