It looks like the last warm days of the season are upon us, so I’m taking the opportunity to squeeze in a last dose of my favorite summer-time fruit – watermelon! They have been particularly sweet this year. Between my husband and I, we can polish off a rather large one in mere minutes. As quickly as my husband cuts a slice, I gobble it up, juice dripping down my face. And to ensure he keeps carving at break neck speed, I shove pieces in his mouth lest he dare use his hands to feed himself.
I think feta cheese is a perfect complement to watermelon. The sweet, juiciness of the melon against the salty bite of the feta sends my taste buds into sensory overload. I include mint because I love the aroma, color and freshness it adds. And you can’t go wrong pairing this salad this with a light, white wine.
If you don’t want to tackle a full melon on your own, most stores will sell you a half or a quarter. And if truly desperate, you can buy the pre-cut stuff in the refrigerated section. But I highly recommend you buy the whole darn thing and spread the joy of eating this luscious beast over a couple of days – if it lasts that long!
Ingredients:
Watermelon (as much as you like) cut into bite-size cubes
Feta cheese (as much as you like) cut into smaller cubes
Mint (as much as you like) ripped into pieces
Directions:
Mix watermelon and feta together in a bowl. Place in serving dish and sprinkle mint over the top. Garnish with a large sprig.
