Greetings from the islands! We left on Tuesday and it’s taken this long to defrost my bones. I have no idea how many posts I’ll get out while on vacation but will try my best. Hey, I’m on island time, Mon!
And yes, getting ready for vacation had a lot to do with my New Year’s Resolution. I don’t want to put all those pounds back on, so I’m trying to eat as healthy as I can for breakfast and lunch so I can splurge on dinner. And since we have a fully equipped kitchen, there’s no excuse for completely falling off the wagon.
I threw this salad together, making enough to last a couple of days – arugula, spinach, mixed greens, carrots, celery, black beans, walnuts & balsamic vinegar. Not too bad for vacation food!
