Summers and coleslaw were made for each other. So when my friend invited me to raid her herb garden, I knew immediately what I wanted to do. I had already planned that morning to make a big batch of coleslaw and the addition of her dill would be perfect.
After clipping more than my fair share of everything in her herb patch, I drove straight to the grocery store for the remaining ingredients. When I returned to my car, the air was perfumed with dill – heavenly.
But by the time I got home, everything was completely wilted! I immediately put them in water and checked on them every hour for a recovery status. By midnight, they will still pretty limp. But this morning, I woke up to a perky, lush bouquet!
I grew up on coleslaw with creamy dressing, but have become a fan of lighter dressings as they really show off the flavors of the vegetables. I didn’t even add olive oil, but you are more than welcome to do so. And if you want to make a creamy dressing, you can try adding canned coconut milk for something different and vegan, or go for the reliable mayo and/or sour cream for vegetarians.
For those following Dr. Fuhrman’s Eat To Live plan, this is allowed on the Life Plan. To comply with the Weight Loss Plan, leave out the agave nectar/honey.
Ingredients (serves 8 – 10)
1 small head napa cabbage (about 4 cups shredded)
1 bunch (about 6) green onions – cut on an angle
1 red bell pepper – sliced
1 yellow bell pepper – sliced
1 green bell pepper – sliced
½ c. currants (or chopped raisins)
¼ c. freshly chopped dill
Dressing
½ c. apple cider vinegar
½ c. red wine vinegar
1 tsp. celery seed
½ tsp. sea salt
½ tsp. freshly ground black pepper
optional: 1 tbsp. agave nectar or honey if you prefer it sweeter
Directions
1. Using the slicing blade on your food processor, shred the peppers and cabbage. Place in a large mixing bowl with the green onions and dill.
2. Prepare dressing in a small bowl, pour over vegetables and mix well.
3. Serve chilled.
