This salad is so delicious you’ll be proud to serve it at parties. And as promised in this post, if you are following Dr. Fuhrman’s Eat To Live plan, you can eat as much of this as you like on any phase of the plan. This truly is Fast & Easy to make for yourself or as many people as you like by scaling the recipe.
Our grocery store had organic raspberries on sale for $1.99 a box this weekend so we bought 4 boxes. I couldn’t wait to make this salad – until I went to the fridge to find my husband had eaten all of them! So it’s back to the store I go and, of course, the berries were sold out. But the conventional ones looked delicious so I picked up a bunch of them. I decided to pair up the raspberries and strawberries with either a casaba or honey dew melon as the flesh of those fruits has a similar texture. You could use a cantaloupe if you like. Mixing those fruits with chopped arugula and basil results in a very aromatic, fragrant dish. You could also use mint if you prefer, but I like the more subtle arugula/basil combination with this salad.
Ingredients (serves one)
2 – 3 basil leaves – sliced into thin ribbons (or mint)
3-4 medium strawberries – diced
1 6-ounce package of raspberries
1 2-inch wedge of a casaba or honey dew melon – diced
1 handful baby arugula – roughly chopped
2 tbsp. fresh lemon juice
Directions
1. Place 8 – 10 raspberries in a mixing bowl. Place the rest in a mini food processor or blender with 1 tablespoon lemon juice and blend until thoroughly mixed. This makes enough dressing for 3 – 4 portions. Refrigerate unused portion.
2. Add strawberries, melon, ½ of the basil leaves, and 1 tablespoon of lemon juice to the raspberries in the mixing bowl. Toss gently until lemon juice coats the fruit. This helps keep it fresh and from turning color.
3. On a serving dish, place a layer of chopped arugula. Pile the fruit on top. Drizzle dressing over the top and sprinkle with remaining basil leaves.
4. Serve chilled immediately.
