I didn’t plan on making this to post on the blog. I was just really hungry and didn’t feel like having my usual afternoon green smoothie.
The weather has been cool again and I wanted something to warm me from the inside out. I threw in everything that was green in the fridge and less than 15 minutes later, there it was. It tasted so good that I decided to make a post of it. Fast, easy, delicious and nutritious!
For those following Dr. Fuhrman’s Eat To Live plan, this recipe complies with the Life Plan. To comply with the Weight Loss Plan, substitute coconut milk with almond or soy milk.
Ingredients (serves 6 to 8)
1 pound bag of spinach
3 ounces (half bag) arugula
1 cup chopped parsley
1 quart vegetable broth
1 Vidalia (or sweet) onion – roughly chopped
1 14-ounce can low fat coconut milk
1 14-ounce can butter beans – rinsed and drained
1 tbsp. herb de provence – crushed
juice of 1 lime
1 ½ tsp. freshly ground black pepper
salt to taste
Directions
- In a large pot, sauté onion and herb de provence in 1/3 cup of vegetable broth for about 5 minutes until it starts to soften.
- Add spinach, arugula, parsley, remaining broth and butter beans, bring to a boil, cover, reduce to a simmer and cook for 8 – 10 minutes. Occasionally stir to make sure all greens are covered in broth and cook thoroughly. Do not overcook greens. They are done when bright green.
- Remove from stove. Add coconut milk and lime juice. Using either an immersion blender or food processor, puree the mixture.
- Add pepper and salt to taste.
- Serve hot or chilled.

This recipe was absolutely delightful. It also filled my college dreams of having a program on the computer that I could tell it what I had in my pantry and refrigerator and it would tell me what to make. We have fresh organic vegetables delivered from a local produce farmer and my wife keeps a wonderfully stocked pantry. So I said Google give me a recipe that uses parsley spinach arugula onion and coconut milk…And presto changeo this recipe came up. Other than substituting white navy beans because I had no butter beans and using clam juice I happened to have on hand as I carelessly ordered Six cases instead one, I followed your recipe exactly😉. I give it five stars.
