This another salad that can be found in our fridge at any time. The flavors are wonderful and it’s loaded with vitamins, minerals and protein. There’s something about the chewy texture of the lentils against the crunch of the walnuts and carrots that is oh so satisfying. And the balsamic dressing finishes each bite with a zesty twang. It’s definitely one of my favorites, made even more so by how easy it is to throw together. This salad can last a few days in the fridge.
Ingredients:
1 cup parsley – chopped
3 medium carrots – shredded
3-4 green onions – thinly sliced
1 15 oz. can lentils – drained and rinsed
½ cup walnuts – chopped
¼ cup balsamic vinegar (as much or as little as you want)
2 – 3 tbsp extra virgin olive oil
sea salt to taste
Directions:
- Combine parsley, carrots, green onions, lentils and walnuts in a bowl.
- Drizzle vinegar and oil over ingredients. Mix well until thoroughly coated.
- Salt to taste.
