The ingredient list for a delicious curry recipe doesn’t need to start with diet-busting coconut milk or oil. This version gets its rich flavor from anti-oxidant dense spices like ginger, turmeric, thai chili pepper, cinnamon, garam masala and garlic. All the flavor of a great restaurant curry – none of the guilt.
Ingredients
1 cup dry yellow lentils (thoroughly washed)
1 medium sweet onion (diced)
1 quart low-sodium vegetable broth
1 cup sweet corn (fresh or frozen)
1 thai chili pepper (seeds removed)
1 3-inch cinnamon stick
1 tablespoon garlic (finely chopped)
1 inch knob of fresh ginger (cut into thin matchsticks)
1 teaspoon turmeric
1 teaspoon garam masala
½ teaspoon ground coriander
garnish with chopped cilantro and green onions
Directions
- Place all of the ingredients into a large soup pot and bring to a boil. Reduce heat to medium, cover and cook for 20 minutes. Stir occasionally to prevent burning.
- Reduce heat to simmer and cook another 15 – 20 minutes until lentils are cooked.
- Garnish with chopped cilantro and sliced green onions.
