I think I have a new favorite salad this summer.
The creamy dressing clinging to the noodles makes this so satisfying that it can be used for a main dish as well as a salad.
I love the blend of sweet and spice in Thai food — can’t get enough of it!
My husband and I kept going back to the bowl for more until we were totally carbed out!
This would make a perfect dish to pass at a party. It’s easy to make and doesn’t need to be refrigerated so it can sit on the buffet table all afternoon. Just make sure you have enough people to finish it off as it will only hold in the fridge for a couple of days before the noodles start to break down. If you are cooking for yourself, just cut the recipe in half and share with a friend!
Ingredients (serves about 8)
2 packages Udon noodles
1 large red bell pepper – diced
1 large yellow bell pepper – diced
1 bunch green onions (about 6) – thinly sliced
1 package extra firm tofu – cubed
garnish – thinly sliced basil leaves
Sauce
¼ c. fresh lime juice
¼ c. red wine vinegar
¼ c. finely chopped fresh ginger
¾ c. cold water
½ c. tahini
½ c. peanuts (or chunky peanut butter)
1 tsp. (about 2) red thai chili peppers – sliced, seeds & ribs removed
2 tbsp. Braggs Amino Acids (or soy sauce)
2 tbsp. finely chopped garlic
2 tbsp. agave nectar (or honey)
2 tbsp. toasted sesame oil
Directions
1. Prepare noodles per package instructions.
2. Make sauce by placing all ingredients in food processor. Blend well until peanuts are completely crushed.
3. After noodles are cooked, rinse under cold water until noodles are thoroughly cooled. Then place in a large mixing bowl, cover with sauce and mix well until all noodles are coated.
4. Mix in diced tofu, peppers and onions.
5. Place on serving dish and garnish with thinly sliced basil leaves.
6. Serve chilled or room temperature.
