I have a million things to do and I don’t have time to make a nice, big salad for lunch before I head out the door. That’s what I love about this green smoothie. It’s salad in a glass! That’s why I consider this a Main Dish. I have one of these almost every day whether for lunch, dinner or a snack. I can throw one of these babies together in 1 minute as I keep ready-to-eat baby spinach, kale and parsley in the fridge. Take it in the car and go!
It’s packed with vitamins, minerals and the flax seed even gives it a little extra protein and omega 3s. The added bonus is that it provides about 3 of your recommended vegetable servings a day, making it a no-brainer way to effortlessly sneak them into your diet.
Tip: when measuring your ingredients, make sure you really pack the measuring cup tight to make sure you get the maximum amount of veg into the drink.
Ingredients
½ cup parsley
½ cup spinach
½ cup kale
1 cup tomato juice (I use Trader Joe’s low-sodium Garden Patch)
1 tbsp. flax seed
1 garlic clove (optional – not recommended if going out in public)
Directions
- Using a coffee grinder or the milling blade on a Nutri Bullet (or similar appliance), thoroughly grind flax seed.
- Place all ingredients in a blender or food processor and mix for 30 to 60 seconds until vegetables are pulverized and smooth.
- Drink immediately.
