It’s hard finding healthy food while on vacation.
Stuffed jalapeno poppers? Got ’em.
Deep fried fish? No problem.
French fries? Of course.
Tofu? Yeah, right!
Luckily we found a market that carries a wide variety of greens and sprouts, so we’re happy.
This salad in a sandwich really hit the spot. It’s kind of a monster so be prepared to unhinge your jaw!
Ingredients (makes 2 sandwiches)
1 cucumber – cut into 1/4 inch slices
1 cup alfalfa sprouts
2 cups arugula
1 avocado
2 juicy limes
1 12-inch baguette – cut in half
salt & pepper to taste
Directions:
1. Mash the avocados with a fork and stir in the juice of one lime. Add salt to taste.
2. Toss the arugula and cucumber slices with the juice of the other lime, salt and pepper.
3. Spread a thick layer of avocado on both sides of the bread, place a layer of cucumbers on top, followed by a layer of arugula and half the sprouts. Then place another layer of arugula on top of the sprouts and top with another layer of cucumbers.
