Aquafaba is all the rage these days. It means “bean water” and is the liquid you drain off from a can of garbanzo beans (chickpeas). It’s being used to make everything from vegan mayonnaise to meringue because it can be whipped into shiny, thick peaks. I thought it’s time to give it a try.
I’m still without a kitchen. No microwave, stove, dishwasher. I don’t even have a sink. I’ve been forced to be somewhat creative in coming up with recipes. One appliance I can use it my favorite smoothie maker – the Nutribullet. I love that thing. They now make a version that heats up to cook soup, but I don’t have that model. However, I found that if you let things spin around long enough, it gently warms the contents.
Voila! Instant homemade soup! It’s raw – but doesn’t taste raw. It only has 5 ingredients and is ready in less than 5 minutes. And it’s healthy! Can’t beat that with a stick! Well, you could, but then you’d just have a big mess on your hands.
The great thing about aquafaba is that it makes everything smooth and creamy without imparting it’s own flavor – just soaks us whatever deliciousness you want to pair with it. I soaked a handful of cashews and blended it with the aquafaba to make the creamy base for the soup. Then I threw in some fresh tomatoes and basil (my basil plants are the only herbs to survive the kitchen remodel – the rosemary, thyme and oregano bit the dust). I topped it off with harissa paste for a deep, savory flavor.

Ingredients (serves 1 – 2)
1/2 cup aquafaba (reserve the chickpeas for another recipe)
1/4 cup roughly chopped cashews (soaked for 2 hours – optional)
2 medium tomatoes, cut in quarters (about 1 cup firmly packed of whatever tomatoes you like)
6 basil leaves
1 teaspoon harissa paste
Directions
- Blend the aquafaba and cashews in a high speed blender for 1 – 2 minutes until creamy and smooth.
- Add remaining ingredients and blend for 2 -3 minutes until completely smooth and gently warmed.
- Serve immediately with basil garnish.
