Ever get tired of tomato-based salsa? Here’s an easy and sweeter remake of the classic party table staple. It’s ready in about 10 minutes and tastes as good as it looks!
For those following Dr. Fuhrman’s Eat To Live program, note that this has the optional use of agave nectar or honey. Whether you want to include it depends on how sweet your mango and corn are. If you don’t use it, then this recipe complies with both the weight loss and life plans.
Ingredients (makes 3 cups – about 6 one-half cup servings)
2 avocados – diced
1 large mango – diced
2 cups sweet corn (fresh or frozen/thawed)
¼ cup fresh lime juice
¼ cup chopped cilantro
2 tablespoons chopped chives or green onion
optional – 1 or 2 tablespoons agave nectar or honey
optional – tortilla chips or large lettuce leaves (for wraps)
Directions
1. Place the diced avocado in a mixing bowl with the lime juice and toss to completely coat the avocados to prevent them from browning.
2. Add in the remaining ingredients and toss to mix well.
3. Serve chilled with tortilla chips or wrapped in lettuce leaves.
