Well, I’m assuming you readers are starting to get the idea of what I’m doing with these posts. I cook some of my meals ahead of time on Sunday and supplement with the Basic Salad and let those carry me as far into the week as possible. Then I pick up a few more things at the grocery store mid-week to finish things off. So these posts are going to get shorter and just cover the basics.
Today’s Helpful Hint: This ended up being a rather “bean intensive” week. I think you know what I mean. While black beans and lentils don’t cause me any problems, chickpeas and kidney beans certainly do! So between the chili and bean salad I made, I kind of overdid things. My advice for you is to understand what your system can handle and go lightly each week with the types of beans that give you problems. Enough said.
Exercise: Yes, I actually did some today! I took a brisk 30-minute walk on this blustery Fall day and it was quite wonderful. Although the trees are past their peak color, there’s still plenty of beauty to behold, so getting outside today was delightful!
Today’s Recipes
Breakfast: Apple-Cinnamon Oatmeal with Black Currants
This is an excellent breakfast to savor the flavors of Autumn. And it’s fast and easy to make! I cooked up 1/2 cup of rolled oats with 1 cup of water and 1/2 teaspoon of cinnamon. You can add more or less water depending on how thick you like your oatmeal. Then to top it off, I diced up 1 Golden Delicious apple, 1 tablespoon of black currants (or raisins) and a light sprinkle of cinnamon on top. Before serving, I mixed in 1/2 cup of soy milk. Truly delicious!
Lunch: Mushroom & Bean Chili with Red Peppers, Sweet Corn & Avocado
Yes, even though I’ve had my fill of beans, I need to finish off everything I pre-made, so I’ll just deal with the bean overload. You can find the recipe in this post. I also had a Basic Salad to go along with it and used the Pico de Gallo for dressing (the recipe for the Pico is in the same post as the chili recipe).
Dinner: Tex-Mex Tempeh Tacos
These were even better the next day as the flavors had time to meld. I again topped it with the Pico de Gallo salsa and has another small Basic Salad with it. The recipe for the Tex-Mex Tempeh Tacos can be found in this post.
