Today was such a gorgeous day outside that I had trouble keeping focused. I eventually succumbed and spent the late afternoon taking a long, brisk walk. Not sure my dog was as enthused about it as I was – kept her on a short leash so she didn’t get to sniff around as much as she would have liked! So here’s today’s recap:
Today’s Recipes
Breakfast: Banana Melon & Hemp Seed Smoothie
Because it was so warm outside, even in the morning, I opted for a light, refreshing smoothie. I made this with a large, over-ripe banana, 1 1/2 cups of extra sweet honeydew melon, 1/2 cup soy milk, 1/2 cup water and 1 tablespoon hemp seed.
Lunch: Mexican Chopped Salad with Avocado-Cilantro Dressing
I used the Basic Salad (large portion) to build this dish up. I added 1 cup of black beans and 1/4 of an avocado (diced). I over-shot my daily avocado allowance by topping this with avocado-cilantro dressing, which had 1 avocado, 1/2 thai chili pepper (from the plant I’m growing on my window sill), 1 garlic clove, 1/2 cup fresh lime juice, 1/4 cup roughly chopped cilantro, 1/2 cup water and a few pinches of salt. I used about 1/3 of the dressing, so will use up the rest later this week.
Dinner: Black-Eyed Pea Soup & Ratatouille Soup
I don’t usually have 2 soups in one meal, but since I had such a big salad for lunch, I opted to have both. I also finished off the last of the honeydew melon. Very refreshing dinner!
Exercise
Yes, I finally got out today and took a 45-minute power-walk!
Today’s Helpful Hint
I now realized how much my body clock is tied to the sun cycle – thanks Daylight Savings Time! It really messes with my eating cycle. Once I start eating, I want to eat every 3 – 4 hours apart. I had breakfast around 9 and lunch around 1. But with the sun going down around 4:30, I couldn’t wait for dinner until 5. I ended up eating at 4:15, which probably means I’ll want to eat again around 8:30. For me, eating after 6 p.m. is a problem – like my system doesn’t have time to metabolize the food. That means I don’t sleep well and I wake up with bags under my eyes and swollen finger joints. So my solution? Go to bed early! I usually turn in around 10:30 – 11, so tonight I’ll shoot for 10 and hope I don’t crave a snack before then. I’m sure I’ll adjust within a week or two, but in the meantime, my strategy will be to simply go to bed before I head to the fridge for a late-night snack. If you have a solution to avoid the late night munchies, I’d love to hear about it!
