Why “parsley in my teeth”?
Because the crevices between my teeth seem to be magnets for any kind of leafy, green vegetable matter. At restaurants, I always ask my husband, “Do I have anything stuck in my teeth?” This query is followed by an obnoxious, wide-mouthed presentation of my dentals, and (depending on the answer) followed by the wild, frantic swishing of water around my mouth, trying to create the force of a fire hose to dislodge any wedged particles. It’s the culinary equivalent of coming out of the restroom with toilet paper stuck to your shoe. Kind of humorous, so decided to go with it.
Why so many “cooking for one” recipes?
I know many people who either cook for themselves or one other person. Their chief complaint is that it’s difficult to find recipes with small portions, so they end up eating out most of the time. I decided to create most of these recipes to make 1 or 2 servings which can be scaled up. I find it more difficult to scale down a recipe that serves 6 to 8, so I hope the approach I take here inspires singles or couples to stay at home and cook something healthy! And those cooking for a family can easily adjust the recipes for as many people as needed.
So what constitutes “fast & easy”?
“Fast” means prep time is generally under 15 minutes, and “easy” means the number of ingredients is usually 5 or less. It also assumes you have access to a food processor, blender or similar appliance for speedy food prep.
What exactly do you eat?
UPDATE: Around October 2015, I went 100% vegan after following Dr. Fuhrman’s Eat To Live program. The things I eat the most of include all types of veggies – with most emphasis on leafy greens – a wide variety of beans, lentils, nuts, mushrooms, quinoa, amaranth, wild rice, hemp/flax/chia seeds, tofu, tempeh and fruit. I use soy, almond and coconut milk for making smoothies. I have recently nearly eliminated bread, pasta and crackers from my diet. Instead of sugar I use dates, Stevia and fresh fruit juices. Instead of refined, white table salt, I use sea salt or Himalayan pink salt. Instead of soy sauce, I use organic tamari or liquid amino acids. I’ve greatly cut down on using oil, but when I do, I use organic coconut oil, avocado oil or extra virgin olive oil. I drink about 2-3 liters of water a day to keep flushing out the toxins. Oh yeah, speaking of toxins, I cheat occasionally – maybe a bit more than that. But when I do, I make sure it’s worth every morsel!
How do you define vegan?
“Vegan” means no animal products of any kind – not even honey.
Are you a nutritionist?
Noooooooo. I’m not a doctor, nutritionist, dietician, etc. I’m just an Average Jane who became fed up with taking meds and decided to investigate whether there were any non-conventional, think-outside-the-box answers to my health issues. I experimented on myself for years until I found what worked for me. I make no claim that what worked for me will work for you. My intention is to provide information and hopefully inspire you to explore ways to use food to make yourself feel great and make your taste buds happy.
Where do you get your recipes?
A lot of them just pop into my head or I create them with my husband. I don’t follow recipes very often (although I have a huge cookbook collection – I love the photos!) and I rarely measure ingredients. If I see a dish I like at a restaurant, on TV, at a dinner party, on a salad bar, etc., I go home and create my own healthy version of it.
What about the photography?
I started out with a Canon EOS Rebel T3 for the first year of blog. Once I started contributing recipes and photographs to professional organizations, I upgraded my camera to a Canon EOS 6D with a 50mm f/1.4 lens. Then I added a Compact Macro EF 50mm 1:2.5 lens which let’s me take photos really close up. My photography is a work in progress. It’s all about practice, practice, practice. I strive to keep improving!
You seem to endorse a lot of products and books on your blog. Are you paid for that?
No. If I recommend a product, it’s because I actually use and like it. For a few months, I joined an Amazon affiliates program to see if I could make a little money to offset blog expenses, but quit shortly thereafter. Just decided it wasn’t my thing.
